INGREDIENTS
1/2 cup hulled Tahini (I love Mayvers Tahini)
2 tbsp Lakanto monk fruit sweetener or coconut sugar
1 egg
1 tsp baking soda
Pinch of salt
1/4 cup collagen
Dash of vanilla bean paste or the seeds from a real vanilla bean or 1/2 tsp vanilla extract
40g dark choc chopped into small pcs (I like to use 90% Lindt)
METHOD
Set oven to 170°C (340°F). Line a baking tray with baking paper.
In a bowl, combine all ingredients except the chocolate and mix well.
Stir in the chocolate pieces.
Using a tablespoon, scoop the mixture onto the prepared baking tray and shape it into cookies, spacing them well apart.
Bake for 15 minutes for a soft, chewy cookie or 20 minutes for a crisper texture.
